There are a variety of acyl forms of lipids in plants. Among them, more than 10 membrane lipid classes, including phospholipids and galactolipids, provide core diffusion barrier of membranes which allow cells to take shape and separate subcellular organelles. The reactions of plant acyl lipid metabolism are catalyzed by at least 120 enzymatic reactions. A large percentage of reactions are those transferring acyl groups between different classes and species of lipids, which are catalyzed by different types of acyltransferases. An important class of acyltransferases is called membrane-bound O-acyltransferase (MBOAT) gene family, which are characterized by the presence of a domain, namely, MBOAT domain. MBOAT family is composed of gene members encoding a variety of acyltransferase enzymes, which play important roles in plant acyl lipid metabolism.
